What’s so impressive to me about this cake is how Donna created an edible scene to match with a set of ceramic figurines. So seamlessly did she integrate the ceramics into the design that it all looks as if it came from the same source. Among the tiny edible garnishes decorating the two tiers of this cake, there are carrots, flowers, leaves, vines, grass, a weathered wooden gate, arched door and signpost with an inlaid Happy Birthday inscription.

I am a fan of Brenda Broadway’s whimsical style of cake decorating. Here are two examples of her work with modeling chocolate. On the left is a pirate themed design with edible seashells, ocean waves, treasure map, pirate ship, anchor, nautical steering wheel, and coils of rope. On the right is a pool party themed cake with edible inner-tubes, flotation devices, and a trio of figurines wearing bathing suits.

Vodka was the trick to achieving the glass shimmer on this 3D wine bottle cake wrapped in modeling chocolate. Rita, the artist, painted the light green modeling chocolate finish with a mixture of dark green food coloring + vodka. You would never guess this was her first attempt using the filling layer cakes in the pan method, so professional is the quality of the work! What I admire about Rita’s creative process is the research & planning she does before approaching new and advanced techniques. She has a knack for problem-solving and never shies away from a complicated project.

This chocolate fudge cake frosted with chocolate ganache was formed in the shape of a wooden crate with packing material and a wine bottle. The decorations were made with a combination of modelling chocolate and fondant. The picture frame is embossed modelling chocolate. The edible label includes the name and year of birth of the birthday girl.

Among Dana’s many talents is a knack for figuring out how to transpose complicated party themes onto traditional dessert shapes. In this example, she transformed a basic sheet cake into a 3D sculpted referee torso complete with black & white striped collared uniform, a pocket, an Arizona patch, a yellow foul flag, and a dangling whistle. This cake was served alongside football themed cupcakes to complete the display.

Fur is one of the more challenging textures to render in edible form, especially when it covers the majority of surface area on the cake. Holly discovered a solution that involves wrapping the body in strips of dark modeling chocolate cut with scissors to make frills. The result is a thick pelt that on the one hand is quite hairy-looking but on the other hand, still manages to appear chocolaty and edible.

My favorite detail about this cake is how the winding buttercream border cleverly doubles as a curly vine. Noreen blended green tones and spatula swirls into the frosting finish of a garden-themed cake decorated with bright blooms of modeling chocolate flowers. On first impression, it appears as if every stroke was casually, effortlessly made and yet upon closer examination, it’s evident that the entire composition is perfectly balanced, singing with harmony. That is the mark of a true craftswoman.

I made 3 naked cakes for our daughter’s wedding this past New Year’s Eve and used your pan filling/freezing procedure and it worked amazingly well.  I was so happy with the result. I made them all the week before the wedding; 1 – 6 layer Almond Scented cake, 1 – 4 layer Chocolate Espresso Cake, 1 – 2 layer Pecan Coconut. I also made 3 full sized sheet cakes, one of each flavor, using the pan filling/freezing procedure. The cakes were all moist and delicious!
