Kanzashi Flowers in Modeling Chocolate
These folded Kanzashi flowers, based on a ribbon technique, are made from modeling chocolate. Watch my video tutorial here.
Koi Fish Cake
This 3D koi fish covered in modeling chocolate scales with piped white chocolate design was served as the wedding cake in the Japanese Friendship Gardens in San Diego. This was the only cake I ever sold to couple where the groom was the sole participant in the cake designing/buying process. He had a very specific vision for the body positioning of this cake. Inside, he wanted red velvet flavor with pink cream cheese frosting so it would look like sashimi when it was cut. Ketchup in Buttercream
