Horizontal Support Dowel Orientation
Although these long pointed dowels are oriented vertically, they are referred to as horizontal supports because they help prevent cake tiers from sliding side to side. Note that these dowels do not need to nest within the same plane as shown in the picture below. Insert them on different axes so there is no risk that they will get in the way of each other.
How to Stack a Cake Tier
Use a small offset spatula plus the palm of your opposite hand to lift and maneuver cake tiers.
Hover it over the spot where you intend to set it down. Slowly and gently lower the far corner of the cake tier down.
Once the far corner has made contact, wiggle the cake until it is centered to your satisfaction. Then, remove your hand, being careful not to bump your knuckles on the tier below.
Once your opposite hand is out of the way, lower the spatula, setting the cake tier down.
