I have made multiple personally designed gingerbread houses. I found the very best way to have a “house” that truly fits together, I did not precut the pieces before putting pieces In the oven. Instead I place pieces about the sizes need in the oven. Them half way through baking, I pull the pan out of the oven, place my
pattern on top of a matching section and cut with a sharp knife, tracing the piece accurately. I return it to the oven to complete the baking. The sections of the house actually fit this way. I found that when I cut them out BEFORE baking, the pieces increased in size and did not fit together very well.
