Royal Icing
This dollop topped a bulk batch of royal icing made for the Wonka Gingerbread House.

The above gingerbread house roofs are all decorated with different patterns of piped royal icing.
Rider Mower Cake
This was my second ever 3D sculpted cake. It is an exact replica of the birthday boy’s rider mower, frosted with Swiss meringue buttercream with liquorice wires and chocolate cake wheels.
Reindeer House in Gingerbread
The gumpaste reindeer that live outside of Santa’s Gingerbread House Workshop on a bed of coconut snow have antlers made of grape stems.
Rooster in Modeling Chocolate
Here is the modeling chocolate head for the giant rooster cake that I made for a reality television show. The whole cake was frosted with smooth buttercream. Read about my adventures in reality cake television here.
