Cake Frosting Basics

The truth is that there is no single right way to frost a cake. In fact there are an infinite number of ways to arrive at a nicely frosted finish. One of the fastest cake decorators who I ever worked with used only a plastic bench scraper as her tool. She scooped frosting from the bowl and applied it to the cake all with that one implement, and although it was not conventional, her results were quite good. I have seen many other tools used successfully for frosting as well, so be sure to use the implements that feel most at home in your hands. Pastry chefs will sometimes say that the very best tool of all is often your own two hands.
