Cookie Academy is a gingerbread school just for cookies.
Giant rice treat cylinders formed in cake pans served as the infrastructure for the round elements of the design.
There were a lot of cookie parts to this house. I used the following recipe and protocols to make them.
Gingerbread House Dough Recipe & Baking Instructions
A layer of royal icing was added to both sides of the roof parts before assembly. Each time, the icing was allowed to fully dry. This helped reinforce the elements, especially around the pointy tips, which are prone to cracking from the pressure of being handled. This technique is called sealing and you can watch my video tutorial about that here: Gingerbread House Sealing and Edging
I created a custom cardboard stencil with rows of bricks cut out like windows. I used that to mark all the spots for the bricks with a food coloring pen, repeating the pattern over and over.
It was a ridiculous amount of piped bricks.
Then I piped royal icing bricks all over the walls.

I made a huge batch of chocolate mortar royal icing to seal together the walls of this gingerbread house.
Here are gingerbread house walls.
The two large forms in front are drying upside down so the chocolate mortar royal icing can be exposed to the air. It took about a week for the mortar to fully dry.
